Eid Mubarak to all our readers!

Hope it has been a lovely month of Ramadan for everyone. In the spirit of celebration, A-DesiFlava reader – the lovely Mrs Waseem Hussain shares her recipe for Qimami Seviyan

INGREDIENTS

Seviyan (vermicelli)                200 gram
Sugar                                        200 gram
Ghee                                         100 gram
Milk                                           1 litre 
Green cardamom                   6 pcs
Saffron                                     8-10 strands
Keora (pine extract)               1 tbs
Almonds (soaked, peeled, sliced)

METHOD

Boil half of the milk with saffron until it gets heavier. Grind 4 cardamoms with sugar. Heat the ghee in a heavy bottom pot then add 2 pcs of cardamom and put seviyan, fry for 1 minute. Add the saffron milk and let it dry.

Now add the rest of the milk and the sugar. Cover it and leave it on very low fire for at least 30 min. At the end sprinkle keora and garnish with almonds. Serves 4 people
